1) Heat a large sauté pan, add the reserved pan drippings (there might be a lot of fat so only use about 2 tablespoons), and place the chopped onions into the pan, sautē until translucent.
2) Add garlic and cook for about 2 minutes, pour in the stock or water, mustard, honey, herbs, and season well with salt and pepper.
3) Whisk until all of the ingredients are well incorporated.
4) Bring the sauce to a boil then reduce heat to low and simmer until reduced. Taste and adjust seasoning as needed.
5) Remove the sauce from heat and serve alongside your beautiful Rib Roast!
