1 (3-5 lb) French Roast
1 Tbsp olive oil
1 Tbsp honey
3 Tbsp Chili Lime Recipe in a Bottle
Directions
1) Rinse meat; pat dry. Smear meat with olive oil.
2) Smear chili-lime rub all over roast. Marinate roast for at least 20-30 minutes or overnight in the refrigerator.
3) Allow roast to come to room temperature for 20 minutes.
4) Preheat oven to 450°F. Set out a 9x13-inch baking pan.
5) Place meat in the pan, drizzle with honey and oven roast, uncovered, for 15 minutes on the center rack.
6) Reduce oven to 325°F and continue to bake, uncovered, until internal temperature reaches 130°F for medium rare (approximately 35-40 minutes for a 3-pound roast; 45-60 minutes for a 5-pound roast).
7) Let rest for 10 minutes before slicing.
